Ingredients

Mackerel 300g

1 Onion sliced

3 Tamarind pieces

2 or 3 Curry or Bay Leaves

1½ tablespoons of Ground Pepper

2 tablespoons of Chilli Powder

1 tablespoon of Turmeric

1 tablespoon of Coconut Oil

Pinch of Salt

Half a cup of Coconut Milk (150g)

 

Method

Heat the oil, add onions and bay/curry leaves. Fry until onions are golden brown.

Add mackerel and the spices. Stir fry for a minute.

Add coconut milk, tamarind pieces and salt. Simmer for around 10 to 15 minutes or until the gravy is thick.
