| Aubergine/ Brinjal | 3 |
| Curry Leaves | 2 – 3 |
| Green Chillies | 6 – 7 |
| Tomatoes diced | 3 – 4 |
| Onions sliced | 4 – 5 |
| Sugar | 1 teaspoon |
| Salt | a pinch |
| Chilli powder | 1 tablespoon |
| Chilli flakes | 1 tablespoon |
| Oil |
Method
Cut the aubergine into sticks and deep fry.

Slice the onions, slit the green chillies and dice the tomatoes.

Heat oil in a pan. Add curry leaves, onions, tomatoes and green chillies. Fry until the onions are golden brown in colour. Add salt, sugar and chilli powder.

Add fried aubergine and stir well. Add the chilli flakes and stir again.
