This simple but tasty butter cake is one of my favourites. I used to make this since I was a little girl and I hope you will enjoy this too. This is perfect for an evening tea on a cosy evening.

Notes
I would always take the butter out of the refrigerator and leave it for around 30 – 45 minutes to melt as it helps to mix the batter smoothly.
I use unrefined sugar for all my desserts because it is healthy and health comes first!
To make the cake even softer reduce the amount of flour to 150 – 170g.
Ingredients
| Plain Flour | 200g |
| Butter | 200g |
| Sugar | 200g |
| Eggs large | 3 |
| Baking powder | 1 teaspoon |
| Vanilla | 1 teaspoon |
Method
Preheat the oven to 200C Fan / 350F or Gas mark 4.
Using an electric beater beat the sugar and butter until the batter becomes fluffy.
Add the eggs one at a time and beat well.
Now add the flour, baking powder and vanilla and continue beating until the batter is fluffy and soft.
Place the batter in a cake tray and bake in the oven for 30 -35 minutes or until a toothpick instred into the middle of the cake comes out clean.
