Chocolate lava cakes are heaven for chocolate dessert lovers. These are half baked gooey chocolate muffins, which will just melt in your mouth.

Notes
Use good quality cooking chocolate.
I use unrefined sugar for all my desserts because it is healthy and health comes first!
Ingredients
| Plain flour | 50g |
| Butter | 100g |
| Dark chocolate | 100g |
| Sugar | 150g |
| Eggs large | 3 |
| Vanilla extract | ½ teaspoon |
Method
Heat oven to 200C/180C fan/gas 6.

Put butter and chocolate into a heatproof bowl and keep on top of a pan with boiling water. Stir well until both butter and chocolate are melted. You can melt the ingredients in a microwave as well. Leave it to cool down.

Using an electric mixer beat the sugar and eggs. Add the eggs one at a time. Add the vanilla extract and flour. Now add the melted chocolate and stir well.

Pour the batter into cupcake moulds and keep it in the fridge for about 15 – 20 minutes. You keep the batter in the fridge for a day or you can freeze the batter.

Bake the chilled batter for about 10 -12 minutes or the frozen batter for 16 -18 minutes. Make sure the tops are firm but the middle feels spongy.
Carefully take the cakes out of the mould or the tray. Enjoy with double cream or vanilla ice cream
