Let me show you how to make this lovely Italian dessert. And that too without eggs! So let us get started.

If you don’t have Marsala wine you can use Rum instead.
Ingredients
| Italian mascarpone | 250g |
| Double Cream | 550ml |
| Marsala wine | 75ml |
| Golden caster sugar | 70g |
| Coffee | 300ml |
| Sponge fingers | 180g |
| Cocoa powder | 2 tablespoons |
Method

Whisk the double cream, mascarpone, marsala and sugar until the mixture becomes thick.

Dip the sponge fingers in coffee few at a time. Make sure you take them before they become soggy. In a deep dish place the sponge fingers and make a layer.

Spread a bit of the mixture on top of the layer. Then place another layer of sponge fingers and repeat the layers. The creamy mixture should be the top layer.

Cover and chill the pudding overnight in the fridge. You can keep the pudding in the fridge for two days. Dust the top with cocoa powder when it is ready to serve.
